  2. 2 boneless chicken breast
  3. 1 tsp garlic ginger paste each
  4. 2 tsp yoghurt
  5. 2 tsp tandoori masala
  6. 2 tsp lemon juice
  7. 1/4 cup egg white for binding
  8. 1/2 cup chickpea flour
  9. Salt tastewise
  10. 1/2 cup sliced red onion

  12. 1.5 cup flour
  13. 1 tsp salt
  14. 1/4 cup oil
  15. 1/2 cup +2 tsp water
  16. for potato stuffing
  17. 2 potatoes
  18. 1 cup thinly sliced onion
  19. 2 tsp paachforon (Bengali 5 spice)
  20. (cumin, mustard, fenugreek, nigella and fennel seeds)
  21. 1 tsp chilli flakes
  22. 1 tsp ghee
  23. 1/2 tsp garam masala
  24. 1/2 tsp coriander powder
  25. 1/2 tsp cumin powder
  26. 1/4 tsp mace powder
  27. 1/4 tsp nutmeg powder
  28. 1/4 tsp chilli powder
  29. for tamarind chutney
  30. 4 tsp tamarind sauce
  31. 1 tsp lemon juice
  32. 1 tsp chaat or chotpoti masala
  33. 1/4 tsp cumin powder
  34. a pinch of chilli powder
  35. 1 tsp black salt
  36. a little bit of water to adjust consistency

Steps to make Khetapuri with Chicken Tikka

  1. Step 1- Lets prepare the chicken for tawa tikka
    I sliced 2 boneless chicken breast. I am going to pulse the processor couple of times to give it a rough chop. Then add 1 tsp garlic ginger paste each, 2 tsp yoghurt, 2 tsp tandoori masala, 2 tsp lemon juice,¼ cup egg white for binding,½ cup chickpea flour, salt tastewise, ½ cup sliced red onion to chicken and mix well. Marinate for atleast 2hrs.
  2. Step 2- time to prep the filling for khetapuri, for that we will need potatoes. Boil 2 potatoes for 45 mins.Slice the potatoes, so that steam can escape and cool down quicker
  3. Step 3- Lets add some flavor to the potatoes, Heat 4 tsp oil on med heat, Fry 1 cup thinly sliced onion till they are browned, Add 2 tsp paachforon (Bengali 5 spice) Cook for 1 min then add1 tsp chilli flakes, 1 tsp ghee, Cook for a minute
  4. Step 4- peel the potatoes in the meantime, Add the fried spice mix, Salt tastewise, ½ tsp garam masala, ½ tsp coriander powder, ½ tsp cumin powder,¼ tsp mace powder,¼ tsp nutmeg powder, ¼ tsp chilli powder and mix. Potato stuffing is done.
  5. Step 5- Lets make the dough for the khetapuri in a standing mixer. Add 1.5 cup flour and 1 tsp salt or tastewise in the mixer bowl. Mix that first then add ¼ cup oil. Then add ½ cup +2 tbsp lukewarm water gradually. It was kneaded in the mixer for about 6-7 minutes. Rest it for 15 minutes. Add some oil to the dough to prevent cracking
  6. Step 6- Prepaer Tamarind chutney. I used basic tamarind sauce and added more spices to it. Add 4 tsp tamarind sauce,1 tsp lemon juice,1 tsp chaat or chotpoti masala, ¼ tsp cumin powder, A pinch of chilli powder, a pinch black salt and a little bit of water to adjust consistency. Mix
  7. Step 7- making the puri’s. Cut the dough into small pieces from which we will make more small pieces. Roll one small piece in your hands to make it longer. Then tear into smaller pieces. Take a small dough, press with palms then stretch. Take a small ball of potato stuffing. Then stretch the dough from all sides to seal the stuffing Stuffing’s done.
  8. Step 8- Take a ball. Press gently with palms and flatten. Simple
  9. Step 9- In a large pan, I had ¾ cup oil heated on medium heat. Shallow fry the khetapuri’s for 3-4 minutes per side. Baste time to time. When Air pockets form in the puri’s, flip them.
  10. Step 10- Frying the tikka
    Using 2 tablespoon scoop a portion and drop it in the oil. Press the meat to flatten with spoon. Fry 3 to 4 minutes per side in batches. Serve with Khetapuri and Chicken Tikka with some salad, tamarind chutney!!
